Bitter Melon Cooking
Generally bitter melon is very bitter but I like eating it.
You can buy it at grocery stores or grow it in your garden during the summer.
The basic way of cooking is to fry it with meat, eggs and other vegetables. If you get the skin ways off well and rubbed it with salt, the bitter becomes less than before.
We call it, “Chample”. It’s an Okinawan dialect.
One way of cooking is to add mayonnaise with tuna. It’s mild and very fresh.
Another way is to cook tempura with it. I found that beer is a good ingredient for tempura. The beer made it less bitter.
This is a bitter melon pickles, flavored with soy sauce and vinegor because I could get tons of them in my garden.
You can also add sugar or red pepper, if you like.
It’s fun to enjoy various bitter melon dishes during the summer.
